Chef Jordan Kahn has a new experimental restaurant open in LA called Vespertine. He calls it "a gastronomical experiment seeking to disrupt the course of the modern restaurant." GQ calls it a "restaurant-slash-play," and Kahn told GQ that "The music might be the most important part of the whole experience." The music for the restaurant was composed by Austin post-rockers This Will Destroy You, and here are some more details via GQ on the premise of it all:

One track will play as you enter on the ground floor, where you will find a 26-foot-long hanging art piece ominously named “The Table” across from the entrance to an elevator that has only one button to push. Another track will play on the second floor, where Kahn will be the first person you see after you emerge, and you will have a conversation with him and his team of cooks about what’s to come. Another track will play on the roof, where you will sit for your introductory snacks and look out over Culver City and the mountains to the east, so long as it’s not raining, in which case don’t worry, they have something else planned. And the last track will play in the 22-seat dining room where you will ultimately eat your spaceship food while sitting on a surprisingly comfortable steel-and-wool banquette, attended by servers dressed in custom, androgynous uniforms that are very Rick Owens–does–Lord of the Rings cosplay.

There's also the "Kitchen" track, which is the music that you'll first hear as you're greeted by Chef Kahn before dinner service begins. That song comes out as a digital single on Magic Bullet Records this Friday (10/13) (pre-order), and we're premiering a stream of the track ahead of its release. It's a very pretty dose of Eno-esque ambient music (not so much like the post-rock of TWDY's albums), and it sounds more like a sci-fi film score than something you'd expect to hear in a restaurant. This Will Destroy You are also touring with fellow post-rockers Sannhet soon, including a BrooklynVegan-presented show on November 14 at Knitting Factory, which is part of the NYC venue's 30th anniversary celebration (tickets).
